Title: Apple-Cinnamon Turnovers

1/2cChunky Applesauce
1tbCurrants
1tsAll-Purpose Flour
1/4tsGround Cinnamon
1/8tsVanilla Extract
4 Sheets Commercial Phyllo
  Pastry; thawed
  Butter-flavored Cooking
  Spray
1tbPlus 2 ts Sugar; divided
1/4tsGround Cinnamon

Combine applesauce, currants, 1 ts flour, 1/4 ts cinnamon and vanilla extract in a small bowl; stir well.

Place 1 sheet of phyllo on wax paper (keep remaining phyllo covered). Lightly coat phyllo with cooking spray; sprinkle with 1 tsp sugar. Top with another sheet of phyllo, and lightly coat with cooking spray; sprinkle with 1 tsp sugar. Cut stack of phyllo lengthwise into 4 strips (each approximately 18 x 3 1/2 inches), using a sharp knife. Repeat procedure with remaining 2 phyllo sheets and 1 tsp sugar.

Place 1 tbsp applesauce mixture at base of 1 phyllo strip. Fold right bottom corner of phyllo over filling, making a triangle. Continue folding back and forth into a triangle to end of strip. Place triangle, seam side down, on an ungreased baking sheet. Repeat procedure with remaining 3 phyllo strips and 3 tbsp applesauce mixture. (Keep triangles covered before baking).

Combine remaining 1 tsp. sugar and 1/4 tsp cinnamon. Coat triangles with cooking spray; sprinkle evenly with sugar mixture. Bake at 375 for 10 minutes or until golden. Serve warm or at room temperature.
